Turkey stuffed tomatoes with Basil flavored olive oil


2 tablespoons (divided) from Olives & Grapes Basil flavored olive oil?

1 lb 93% lean ground turkey

1 clove garlic, minced

1/4 medium onion, minced

1 tbsp chopped basil leaves

6 large tomatoes, washed

2 teaspoons salt

1 teaspoon ground pepper

1 cup of low-sodium chicken broth


  1. Mix one tablespoon of Basil olive oil, garlic, onion, basil, salt and pepper into the ground turkey.
  2. Slice the top of the tomatoes and use a spoon to scoop out the tomato pulp.
  3. Spoon 1 spoonful of meat mixture into each tomato.
  4. Place stuffed tomatoes onto a small baking pan, pour the chicken broth on the bottom of the pan. Cover with aluminum foil. Bake for about 20 minutes or until the tomatoes are tender.
  5. Carefully remove the foil. Drizzle more Basil flavored olive oil on top of tomatoes. Serve hot with rice, pasta, or salad.
