Double Orange Cookies
Ingredients:
1 cup granulated sugar
2 Tbls from Olives and Grapes Cara-Cara Orange & Vanilla white balsamic vinegar
½ cup from Olives and Grapes Navel Orange olive oil
1 large egg
1 tsp pure vanilla extract
1 tsp baking soda
½ tsp salt
2 cups of all-purpose flour
Preheat oven to 350 degrees. Line baking sheet with parchment paper.
In a medium bowl, combine sugar and Balsamic using a fork. It will look like wet sand when thoroughly mixed.
Combine sugar mixture with Orange Olive Oil using an electric mixer. Beat on high for one minute.
Add egg and vanilla to mixture and beat until well combined.
Mix in baking soda, salt and flour and mix until all ingredients are combined.
Drop batter by tablespoon onto parchment paper lined baking sheet, about 1” apart.
Bake for 7-8 minutes until the edges are just set. They may seem underdone, but they will set up and be chewy. Let cool for 5 minutes on the baking sheet, then transfer to cooling rack.
Helpful Hint: I find it’s much easier to spoon out the batter if it is cooled in the refrigerator for at least an hour. Refrigerating overnight makes it even easier but is not mandatory.
