Marinated Tomatoes Teruel
Ingredients
  • 3 very large ripe tomatoescut into 1/2-inch-thick slices
  • 1/3cup 100% pure Extra-Virgin Olive Oil.
  • 1/4cup Sherry Reserva wine vinegar or Red wine vinegar
  • 1/4cup finely chopped onion
  • 2tablespoons drained capers
  • 2tablespoons minced fresh parsley
  • 1 large garlic cloveminced
  • 1teaspoon salt
  • 1teaspoon dried basilcrumbled
  • 1/4teaspoon ground pepper
  • Fresh parsleyoptional
Instructions
  1. Arrange tomatoes in single layer in shallow dish.
  2. Combine oil and next 8 ingredients in medium bowl, stirring to blend well.
  3. Spoon dressing over tomatoes.
  4. Cover and marinate in refrigerator 3 hours.
  5. Divide tomato slices among 4 plates.
  6. Spoon dressing over.
  7. Garnish with parsley if desired and serve.
